They were most likely counting on 4680 to be A LOT more effective, for Roadster and Cybertruck to hit those 640 mile range and 500 mile range.
Beyond energy and power density 4680 doesn't look like it has great thermal management or charge/discharge capability.

It could be any of those things... or a host of other reasons as well. I'm in the same boat as OP. I have two aging Model Ss. I certainly won't buy another while Musk exists on this planet. I like my cars but I'm a product of the 18th Century Enlightenment and all the ideals that came from it. I don't fawn over oligarchs, I read books and real journalism (not social media). I read history and I get the appeal of 20th Century fascism but I also know the end product is never like what you see in the advertisements.

Elon has full-on supported a political party that doesn't believe in climate change. The Elon hate is completely justified. I say this as someone who drives a Tesla and thinks they make the best cars.
They make the #1 American built car. But I'd say this is someone who doesn't care about that.
Even if it does, high density sodium ion and LFP fundamentally outperform "battery day" in the terms that matter: price and materials scaling No matter how good a 4680 NMC is, sodium ion will be 1/2 the cost or more for the equivalent battery pack range. No one will care if it can go 500 miles if it costs 4x a 300 mile sodium ion pack.
