How many km (if any) do you drive a brand new seal before you give it a good squirt and test it’s acceleration?

I bought a brand new seal performance and am always of the mindset, a new vehicle needs 2,000km to bed in all the parts properly, while I know that is more for petrol vehicles, does this apply to an EV?

the manual says to keep it in eco for 2000km but thats a holdover from the hybrid models

Until the end of the dealership driveway. EV's (Seals at the least) don't have a run in. As mentioned by the other poster, the break in mentioned in the manual is for hybrids and just wasn't removed from the manual. But be prepared for what you're about to unleash and the subsequent tyre wear you'll encounter 😂

I only ever drive in sport mode. Not cause I drive like a hoon 24/7, but because the poor 'throttle' response in other modes feels terrible. But it's still very easy to drive responsibly in sport mode, with minimal impact to range or tyre wear.

Put in sport at the dealership and launched it down the street. Hasn't changed modes since.
