Can someone explain the point of these coverings? They seem to provide no real benefit outside of hiding general aesthetic choices, which is odd when I see R2 postings and they merely have a u due wrap on them. What’s the deal? Is there something I’m missing?

The covers are used to hide the looks of the new cars. Some companies use cloth covers, while others use wraps that have special patterns on them to hide contours. Generally the interior is also covered. Companies don't want to leak the details of new model launches, or model refreshs since this can have an impact on the sales of the current generation model.

I’ve not noticed a meaningful difference between my m3 and a solid roof car. 90% of the heat comes through the windscreen imo. Covering it does most of the job in the summer, except when there is significant portion of sun coming in from either side in the evening. Pretty small fraction seems to get through the roof…

That depends. Initially it could / would cost more due to less commonality in the parts but it could eventually pay out in the saved materials. But, if this is the case, I would believe that they are able to utilize mostly the same parts, for example do the castings with just some "blocks" in the casting, so that it is essentially same tool for both. But from this picture alone, I find it hard to believe.

You can set up an automation from your phone. If you have fixed timing for getting into your car Like evening 5pm, or afternoon 1pm or morning 9am you can simply set an automation that if the local temps is above “X” degrees cool the car. YouTube and ChatGPT can help you further with detailed instructions. Know a friend who does it and he doesn’t have to worry about cooling his car ever.
