I’ve had my seal u for just over 12 months now and love it, but I just can’t get my head round the headlights. On dipped there is no gradual fade from light to dark. Just a solid line from bright light to darkness. On roads with lighting this isn’t an issue however on country lanes it’s impossible to judge the road without switching to main beam which is difficult when the lanes near me are reasonably busy. Has anyone else experienced this? Surely the headlight lens could fade the light more on dipped?

No clue what you mean by "dipped", but it is perfectly normal for LED headlights to have this sharp edge at the end of the illuminated area. No way around it, it's how these type of headlights work.

Have you had cars with bright LED main beams before? This is my experience with Volvo and Audi as well. You can raise/lower the level using a roller below and to the right (UK) of the steering wheel, if the main beams (not high beams) are not illuminating far enough.

Try the headlight height adjustment from the menu and see if that helps, to increase or decrease the beam height for low beam. This is mainly intended to counteract when you have heavy load in the boot of your car. Too high and it might be nuisance for other drivers.
