It can be anything from 8 to 10 seconds depending on cow cold it is.
0to31 is quick on both ev and hev mode at around 2s+. The second half takes double the time in HEV or over inEV only.
My personal best was 5.1s in summer, but in winter is really slow.

I consistently get below 6 seconds in EV mode, but I'm in a tropical country with very mild winters.

BYD PHEV are basically only electric drive.
They can direct drive from ICE but only at highway cruising speed, as they only have one gear ratio.
The only limit would be how much power it can suck out of the battery in a short time. if the ICE is generating it would provide a bit extra power, but it shouldnt make a big difference in accel.
take one for a test drive and you will see that its fine :D

Would that mean that the stated 0-62 acceleration time of 5.9 seconds is the same no matter if I'm in electric only or hybrid mode as theoretically it's just always electric?

The ICE can be used above 40mph so it may still be used for part.

I went to test it. The petrol engine activated when pushing the pedal to the metal.
It was the awd with 50% charge and ICE was set on 25%.

I have the Seal U ‘Boost’ PHEV: all the toys, but the smallest engine (FWD only) and smallest battery. It’s fine [as a tourer](https://www.reddit.com/r/BYD/s/qqxFheiTqL) and as a daily driver.
But: it is also a ~2 ton family SUV. It is not a race car. And that’s ok.

Does it switch back to EV only mode automatically once you ease back off the pedal or can you at least manually switch it back? I apologize for all the questions, I'm totally new to the electric scene.

It remained in the last mode. You can switch anytime back to EV mode on the console during your drive. But the salesman told me before the test ride it does go to HEV when your driving style becomes sporty.
I'm waiting for my own Boost Trim version to fully get to know it all. My experience is based on a 40minute drive with battery below 50%

Can't say for sure. But I can use my byd shark (phev) as an example.
5.7 seconds when in HEV mode (all 321kw) and ev mode is 250kw and around 7 ish seconds.

They do drive mostly via the electric motors but the petrol engine can still send power (not talking about mechanical power) to the electric motors.
Like in my byd shark around a 1.5 seconds difference in acceleration from being in HEV or ev mode

My 5.7 is hev 100% since it will use instant ev torque to launch and spin up the turbo in the first 2.x seconds to then blast to 60/100 with full double ev and ice power. It needs it to get that heavy AWD car moving.
But honestly, if you're that focused on ev performance, why consider hev at all? This car was not made for ev range. Would consider the Sealion 7, which is insane from the line and great on specs and ride as well.

The difference between 321kw and 250kw (in my byd) is not exactly nothing. It's information I would like to know before buying a vehicle especially if you plan to drive it in ev as much as possible.
It perceivable and meaningful. So nope, not like you just said

I wouldn't get this for 0-60. But for everything else it's bang for a buck.
